The point is I made waffles for my lil sis so she wouldn't have to eat frozen garbage. They are so easy to make and the recipe is super easy to remember. You could even make these chocolate if you wanted to. Or enjoy their waffle goodness as they are:).<br/><br/>
<b>Waffles </b><br/>
<br/>
<b>Ingredients </b><br/>
2 c. Flour <br/>
2 c. Milk<br/>
2 t. Baking powder <br/>
2 T. Sugar <br/>
2 T. Oil<br/>
2 egg yokes<br/>
2 beaten egg whites <br/>
1 t. Salt<br/><br/>
<b>Make</b><br/>
Mix flour,powder,sugar, and salt in a mixing bowl and set aside. Then in a separate bowl whisk milk, oil, and two egg yokes together and set aside. In a mixer beat two egg whites until they form firm peaks. Mix your wets and your dry ingredients together. Then fold in the egg whites with a spatula. <br/>
At this point you can use this batter in your waffle maker. Everybodys is different. I would assume you know how to work it. Mine involves using a knife to press a button to flip it;).<br/>
* you can add 1/4 c. Dutch cocoa powder and 2 T. Sugar per c. I have been knocked out, cough a lung out, sick. That didn't stop me from baking. But sadly it did stop me from writing new posts. :(<br/>
I can't get fast internet at my house where I live so I have to rely on my smart phone to write my posts. The thought of how sore my thumb was going to be made me go to sleep tired. So sorry I couldn't pull it out of me this week!! But I promise I will make up for it next week!! <br/>

My Data plan is running low because it is the end of the month so this is going to be a short post:(. Once again High Five Friday is a celebration of all the successes we have achieved throughout the week. I am going to give myself a High Five for my test results on my reading test. I had to take a reading test this morning so I could be considered to go to the Kiamichi Vocational School in my town. I am happy to report that I scored a 92% on my test!!! :D I got 23 of 25 questions correct, my grade equivalent was a 12.9, I only needed a 8.0 to pass, and I scored in the 99 %tile for the test.<br/>

<b>Yummy blueberry smoothie</b><br/>

Serves 2 - 211 calories per serving <br/>
<b>Ingredients </b><br/>
1 c. Of blueberries<br/>
8 oz. Of vanilla yogurt<br/>
3/4 c. Milk<br/>
2 T. Agave nectar<br/>
1/2 t. Vanilla extract <br/>
<br/>
Blend all ingredients and serve immediately:).<br/>

We where supposed to make a fried patty. We could make whatever we wanted as long as it had a binder and it was fried in oil. Awesome right?? So I knew I was making a veggie Burger. My Tia (aunt) also took part in the challenge and she made her famous potato patties. I will also post her pics and recipe. Why don't we start with hers?<br/><br/>Tortas de papas:<br/>Step 1: boil 2 to 3 potatoes for each person. Add plenty of salt. Boil until fork tender. If you boil the potatoes with the skin on she finds they come out more flavorful.<center><img src="https://lh4.googleusercontent.com/-I0rGkhLFQSo/TzzK3rihSGI/AAAAAAAAAMc/mvYBnsP40Qs/%25255BUNSET%25255D.jpg width="320" height="180"/></center><br/> Step 2: Chill and peel your potatoes. Add 1 1/2 c. Of Cotija cheese. You can substitute with parmesan cheese if needed. Add 3 eggs and 1/2 a cup of green onions. Now my dish I did this month was one I found in Washington post. This recipe is for a black bean burger. It was delicious! I served it with burger toppings and BBQ sauce. (I know weird) And I made some sweet potato fries for the side.( I will post later) I loved the taste of this burger and the coloring. It was super easy to make. I cut the original recipe in half and it made 3 patties. So I have more in the freezer. :) <br/>Please excuse the lighting. It barely snowed here in Oklahoma and it was awfully gloomy outside.<br/><br/>
Black Bean Burgers<br/>
Adapted from Washington Post's "<a href="http:// http://voices.washingtonpost.com/mighty-appetite/2008/05/a_bean_burger_worth_biting_int.html">spicy black bean burgers</a>"<br/>2 c. Cooked and drained black beans<br/>1/4 c. Bread crumbs<br/>
1 egg<br/>
2 scallions<br/>
2 T. Cilantro <br/>
1 Garlic clove, minced<br/>
1 t. Cumin<br/>
1 t. Oregano <br/>
A few sprinkles of red pepper flakes <br/>1/2 t. Salt<br/>
Sprinkle of black pepper<br/><br/>
Put most of your black beans into a food processor and pulse until chunky. Then add all the rest of your ingredients into the food processor and pulse until mixed. Form into patties and chill for fifteen minutes. When ready to cook remove from fridge and sprinkle with salt and pepper. Place a frying pan on high heat with just enough oil to coat the bottom. Then place the patty on the skillet and cook for 4 min. On first side. Then flip over and cook for 5 min. over medium heat. <br/>

Most chocolate syrups contain HFCS or High Fructose Corn Syrup. This makes me hurt. And quite frankly I don't see why they put it in there if you can make the real stuff without it? <br/>
Try this syrup you won't be disappointed.<br/><br/><b>Chocolate syrup </b><br/>Recipe from <a href="http:// http://voices.washingtonpost.com/mighty-appetite/2009/02/chocolate_syrup_the_old-fashio.html">Washington Post.</a><br/><br/><b>Ingredients </b><br/>
1 c. Unsweetened cocoa powder<br/>
1 c. Granulated sugar<br/>
1 c. Cold water<br/>
1/4 t. Salt<br/>
2-3 t. Vanilla extract<br/><br/>
In a medium saucepan whisk cocoa and sugar until the lumps are gone. Add the water and salt and mix well with whisk. Cook over medium heat and bring to a boil. Keep boiling until thick.<center><img src="https://lh6.googleusercontent.com/-HrGL3z77s7Y/Tz7BTSCS1LI/AAAAAAAAANM/jAnhkYnvRd4/%25255BUNSET%25255D.jpg width="320" height="240"/></center> Remove from heat and allow to cool. <b>Snicker doodles </b><br/>
Recipe from <a href="http:// http://www.browneyedbaker.com/2009/07/08/snickerdoodles/">Brown Eyed Baker </a><br/>
<br/>
<b>Ingredients </b><br/>
2 3/4 c. Of flour<br/>
2 t. Cream of Tartar <br/>
1 t. Baking soda<br/>
1/4 t. Salt <br/>
1 c. (2 sticks) of unsalted butter, at room temp<br/>
1 1/2 c. Sugar<br/>
2 eggs<br/>
1 t. Vanilla extract<br/><br/>
<b>Topping</b><br/>
3 T. Sugar<br/>
1 T. Cinnamon <br/><br/>
<b>Prep</b>:<br/>
Spread parchment paper on your cookie sheets and stick them in your freezer to chill.
Assemble your cookies:<br/>
1) whisk together flour, baking soda, cream of Tartar, and salt in a medium bowl.<br/>
2) cream the butter with the sugar until pale and fluffy. Then add your eggs and vanilla and mix well.<br/>
3) gradually stir in your flour mix on a low speed.<br/>
4) chill cookie dough for at least 30 min.<br/>
5) while you wait mix together the sugar and cinnamon in a small bowl.<br/>
6) scoop 1- inch balls of cookie dough and roll in the cinnamon sugar mix.<br/>
7) place on chilled cookie sheet and bake for 10 min.<br/>
8) chill the sheets and dough between batches.<br/>
9) let cookies rest for 2-3 min. Then move to a cooling rack.<br/>
10) enjoy with a big glass of <a href="http:// http://learnasyougocook.blogspot.com/2012/02/no-hfcs-chocolate-syrup-and-success.html?m=1">chocolate milk</a>:)<br/><br/>

Great idea right?? I mean it makes sense. The taste and warmth of your tea mixed with the taste of organic rolled oats. Plus I added blueberries:)<br/><br/>Tea Cooked Oats<br/>

<br/> one cup of tea ( I used a lemon grass and spear mint blend)<br/>
2 t. Of agave nectar<br/>
A small handful of blueberries <br/>
1 handful of oats<br/>
A splash of milk<br/>
<br/>
Brew your cup of tea<br/> then put one handful of oats into a small bowl and squeeze your agave into the bowl and sprinkle with blueberries.<br/>
Pour the tea into the bowl and cook for one minute.<br/>
Cool with milk and eat:)<br/>

Food had been devoured and one team has won. I think this was the only Superbowl I didn't watch. Yes I know ....what! But I was to busy watching kids at this game. So I caught up on Superbowl commercials on the today show the next day. Can I say Mr. Quiggly was one of my favorites. If I ever own a bulldog I am going to name him Mr. Quiggly. Too cute! I still can't get over it. So this is the pic of the good looking bunch of kids I watched during Superbowl:

I think what made it memorable was my lil sis Alli dancing to the show in front of the TV. Because I found Madonna's performance pretty ridiculous. I mean it was kinda entertaining in a silly kind of way. But that's just my opinion. <br/><br/>And I am sorry I totally forgot to take pics of the food. But I can assure you I ate my fare share. We brought homemade pizzas and I made a cinnamon dessert pizza.<br/>

HOMEMADE FIG NEWTON'S!! This is what I thought when I saw the post on <a href="http:// http://www.browneyedbaker.com/">Brown Eyed Baker</a>. I love fig Newton's but sadly don't get to eat it much because of how processed it is. So biting into this cookie(?) made me call to mind summer, road trips, and the smell of Oklahoma air in the summer time. ( Does that make me sound crazy??) <br/>
(You know the part where you miss Oklahoma summers? )<br/>
<br/>
Fig Jam:<br/>
1/2 lb. Of Figs (I used Turkish)<br/>
2 c. Apple Juice<br/>
One pinch of salt <br/>

Put all ingredients in a pan and set over medium heat. Stir occasionally for fifteen to twenty minutes until soft and syrupy. Then allow to cool. Next process in a food processor. Empty into a jar to store.<br/>

Fig Newtons<br/>
All of your Fig Jam<br/>
1 1/4 c. All purpose flour<br/>
1/2 t. Baking powder<br/>
1/4 t. Salt<br/>
6 T. Unsalted butter <br/>
3/4 c. Brown sugar<br/>
1 egg at room temp<br/>
2 t. Vanilla extract <br/>
Preheat your oven to 350°. Then begin by lining a 8 inch square baking pan with parchment. Grease the parchment.<br/>

Place in freezer for 30 min. Then spread fig mix over crust and top with frozen dough. Bake 25-30 min. Cool 2 hrs.

2 lettuce leaves<br/>

A little less than 1/4 c. Mozzarella cheese<br/>
2 slices wheat bread<br/>
2 T. Honey Mustard<br/>
<br/>
First chop all your veggies.

<strong>What I'm Eating</strong><br />
So after being straight vegetarian I went back to eating meat. And then said forget that and went back to being a vegetarian. I am a pescetarian. Yeah what the heck does that mean? <a href="http://en.wikipedia.org/wiki/Pescetarianism">click here</a> to find out how wikipedia defines it.I pretty much avoid meat but can still eat Seafood and eggs and dairy. So I won't go completly crazy and go back to eating Hotdogs. So not cool.<br />

<strong>My Allergy</strong><br />
I am allergic to Latex. So that means every time I go to the orthadontist I have to here him complain about having to wear pink gloves. Suck it up dude. It's not my fault I was born this way and the feel of Latex gloves or food that contains them, (Latex not Gloves) makes me Hurt like crazy. So if I eat that Double Quarter Pounder from Mcdonalds I get horrible cramping in my legs, the kind that wake you up in the morning crying. Or if I have that A&W Rootbeer, (my fave) my back and shoulders will hurt. This is my main reason for not eating meat, soda, or junk food. Becaus it hurts me. So eat stuff thats not good for you anyway or live a pain free life. I think I will choose the latter.<br />

<strong>Our Garden</strong><br />
So because my mom and me both have the same kind of problems, (hers worse than mine) We have decided to grow an Heirloom Garden. ooo yes delicious Tomatoes and Cuccumbers. And rare kinds like Sunberries and Ground Cherries. So watch out for my posts on how our garden is doing and what I'm making from it. <br />

Also we got chickens last year. 14 in all I think. Now we are getting seven eggs a day. yummy fresh eggs for our pasta, and baked goods. If only our dog hadn't eating like ten pullets...<br />

My horrible, no-good, mangy, huge, dumb, no mannered, dog. He is Mastiff, Dalmation, Pyrenees. He is huge. I don't think he is so much a dog as a horse. He eats everything in sight. From chickens to poop to concrete. He is <u>disgusting.</u> And no manners. so don't expect to come to my house without having a horse jump into your car. uugg.<br />
<br />
<strong>My Room</strong><br />
I finally got my own room after sharing with my brother and sister for several years. It is blue. I would like to think it reminds me of my favorite place. The ocean. And it is mine. So that is all that counts anyway right?<br />

<strong>My Phone</strong><br />
The life of my first phone was emotionally scarred. The poor thing. From being dropped on concrete several times. It looked so banged up and scratched it was embaressing. The back case was warped and the screen had rainbow spots. It was my first. A hand-me-down Pantech Impact. It was ok. Good for texting and calling it satisfied me in those areas. But with the invention of the Iphone and touchscreens I couldn't wait to get my upgrade. <br />
You get what you wished for. It was a cold Day. One of the last days of October. I was sick and throwing up and forgot somebody. Someone who spent the night in a cold pool of mountain dew in my moms cupholder of her car. <br />

<strong>My New Phone</strong><br />
So my new phone is awesome. Sorry if that sounds cold. But it is everything a fourteen year old could ask for. It was the new Google Nexus S. It is touchscreen. Goes on the Internet. Allows me to blog from my phone. And has a nice camera. Every pic I take thus far is from my phone. With the help of Picsay I edit all my pictures from my bed. It may also be good for playing words with friends:-).<br />

1: Get my braces off. Deadline: End of Febuary. Yeah!!! I have only waited TWO YEARS for that one!<br />
2: My Uncle is Getting married this saturday. Shoutout: wishing you many happy years with Rosa!<br />
3: I will hopefully be going to Kiamichi Vocation School for computers and Cosmotoligy(?). Yayx2<br />
4: I will be going to Frisco (near Dallas) in August. <br />
5. Wouldn't it be lovely if I went to Florida this summer?<br/>
6. I can get my permit in December:)<br/>
I think that is mostly it for now. But I am sure I will mention others throughout this year.<br/>

It was my first time making it in a while. ( my mom usually makes it) It was easy and fun, just make sure you don't overcook it! Mine came out a little burnt and dense, but the flavor was all there. Remember the stove I may have mentioned? If I didn't mention it yet, we just got a new Frigidaire Gallery gas range. It is awesome, what with its convection oven, but it is hard getting used to such a nice new oven. Not some bogus white 80's oven.
<b>YUCK!</b>
Ingredients:
1/4 c. Sugar
2 T. Yeast
1 c. Milk
1 c. Water
5-6 c. All-purpose flour
1/4 c. Oil
2 t. Salt
Make:
Mix sugar and yeast in your mixer or bowl. Then scald your milk. I did mine in the microwave at 1 min. 40 sec. The pour room temp water into your milk and pour into yeast mixture. Let proof. (It should get all poofy and take about 6min.) Then mix in your flour. <u>NEVER</u> mix in salt first! This will kill your yeast and your bread will not rise. I have a heavy hand so I only use 5 c. Of flour but you can use 6 if it is too sticky. Mix in oil and salt. Then roll into a ball on a hard surface. Drizzle some oil in your bowl to coat it so it won't stick and place your ball back in. Let rise for 50 min.
Then empty onto a hard surface and cut in half. Then in half again. Then in half again. Then make sure you have a baking sheet with parchment paper on it ready for your rolls. Then start twisting your rolls.

Step 1: roll into a long rope like, snake like, strand.

Step 2: cross into a ribbon.

Step 3: pull one strand through the hole and kind of tuck the other strand under and smooth the bottom.

Step 4: let them rise for 20 min. In a warm oven. The bigger they get the better they will be so don't worry about letting them rise longer. When they are done rising take them out of the oven. Give them an egg wash while your oven heats up. Throw them in at 345°convection oven temp for 20 min. Until golden.

So maybe my mom and me shouldn't have decided to be so creative this month. The challenge was TAMALES!! My favorite especially because we are Mexican and it brings good memories. But my mom had never really made them with a recipe she liked. So we decided we were not going to follow the recipe and instead do our own. Big mistake. Because the store masa hurts my mom and me ( we have problems with most modified foods and latex) we wanted to make our own. My mom grew up a good portion of her life in Mexico and remembers a lady she was staying with making them from scratch with fresh corn. So she wanted to copy the same recipe. We borrowed Mexican cooking for dummies from our library and found our recipe. It had everything my mom remembered except for, hominy grits. She decided not to put those in but instead put a little corn meal in. The first batch we made had no baking powder in it( because I forgot) and so when we made them they were corn Smoothies with Cheddar cheese and jalepenos. Yuck. We tried again but this time with baking powder. We made a small tamale and stuck it in the microwave. It seemed to cook so we made a second batch and hoped for the best. Mind you this was our dinner. When it came time for dinner everyone opened there tamales, and guess what? 1..2..3... The only thing I did different was I used my mom's homemade flour tortillas instead of making the thin pancakes, and I did not use black fungus (because I couldn't find them), I also could not find rice wine so I used rice vinegar. Oh, and I almost forgot I had to use crunchy peanutbutter in the hoisin sauce because I didn't have regular! (embarrassing) but I still liked the extra crunch it gave the dish.In the words of my six year old cousin sofia; "these are chinese burritos!". They are just like a breakfast burrito and just as easy to make. <br/> <br/> Hoisin Sauce <br/> <br/> 4 T. soy sauce <br/> 2 T. peanut butter or black bean paste <br/> 1 T. honey or molasses <br/> 2 t. white vinegar <br/> 1/8 t. garlic powder <br/> 2 t. sesame seed oil <br/> 20 drops chinese style hot sauce (optional) <br/> 1/8 t. black pepper <br/> <br/> Mix all ingredients by hand with A sturdy spoon. At first it looks like it won't mix together but keep going and it will. <br/> <br/> Moo Shu pork <br/> <br/> 2/3 c. dried black fungus (' wood ears') <br/> 1/2 lb. pork loin or butt <br/> 3/4 c. bamboo shoots, thinly cut <br/> 3 c. chinese (napa) cabbage, thinly cut <br/> 3 large eggs <br/> 1 t. salt <br/> 4 T. oil <br/> 2 scallions <br/> 1 T. soy sauce <br/> 2 t. rice wine <br/> A few drops of sesame oil <br/> 12 tortillas to serve <br/> <br/> Directions: <br/> <br/> 1) soak Fungus in warm water 10-15 min drain and remove any hard stalks, shred. <br/> 2) thinly cut the pork, bamboo, and cabbage into match stick pieces. Chop scallions. <br/> 3) lightly beat eggs with a pinch of salt. <br/> 4) scramble eggs in a preheated skillet with 1 T. oil until set but not too hard and set to the side. <br/> 5) heat remaining oil. Stirfry the remaining pork for about one min. Or until it changes color. <br/> 6) add veggies and stir another 2-3 min. <br/> 7) add your wet ingredients and stir another 2 min. <br/> 8) add scrambled eggs and mix them in while breaking them into pieces. <br/> 9) to serve put 2 T. of mix into the middle of the tortilla and top with hoisin sauce.
