I'm Making Waffles!

*insert Donkey voice here*
If you haven't watched shrek ignore the comment above.
The point is I made waffles for my lil sis so she wouldn't have to eat frozen garbage. They are so easy to make and the recipe is super easy to remember. You could even make these chocolate if you wanted to. Or enjoy their waffle goodness as they are:).

Waffles

Ingredients
2 c. Flour
2 c. Milk
2 t. Baking powder
2 T. Sugar
2 T. Oil
2 egg yokes
2 beaten egg whites
1 t. Salt

Make
Mix flour,powder,sugar, and salt in a mixing bowl and set aside. Then in a separate bowl whisk milk, oil, and two egg yokes together and set aside. In a mixer beat two egg whites until they form firm peaks. Mix your wets and your dry ingredients together. Then fold in the egg whites with a spatula.
At this point you can use this batter in your waffle maker. Everybodys is different. I would assume you know how to work it. Mine involves using a knife to press a button to flip it;).
* you can add 1/4 c. Dutch cocoa powder and 2 T. Sugar per c. Of waffle mix for chocolate waffles.

My Sick Self

I can't help it those pics made me smile all week. When I wasn't miserable and coughing. That's my lil brother and sister. So cute I can't get over it.
Now back to me.
I have been knocked out, cough a lung out, sick. That didn't stop me from baking. But sadly it did stop me from writing new posts. :(
I can't get fast internet at my house where I live so I have to rely on my smart phone to write my posts. The thought of how sore my thumb was going to be made me go to sleep tired. So sorry I couldn't pull it out of me this week!! But I promise I will make up for it next week!!
I spent my leap day well stocked. I made so many treats I couldn't keep track.
I made:
Mexican Hot Chocolate Snicker Doodles
Chocolate Chip Cookies
Chocolate Chip Granola Bars
And Waffles!!
Mind you I was partially still sick, but I wasn't about to waste a beautiful leap day.
So I think I will give myself a High Five for finally stocking my freezer with snacks. ( something I have been putting off)

High Five Friday

Happy High Five Friday!
My Data plan is running low because it is the end of the month so this is going to be a short post:(. Once again High Five Friday is a celebration of all the successes we have achieved throughout the week. I am going to give myself a High Five for my test results on my reading test. I had to take a reading test this morning so I could be considered to go to the Kiamichi Vocational School in my town. I am happy to report that I scored a 92% on my test!!! :D I got 23 of 25 questions correct, my grade equivalent was a 12.9, I only needed a 8.0 to pass, and I scored in the 99 %tile for the test.
I am happy with my week, what would you give yourself a High Five for?

Yummy Blueberry Smoothie

So as was obvious yesterday, I have been in love with Smoothies.
As in can't get enough of, craving, must have it now obsessed. And this blueberry smoothie I made for breakfast the other day is to good to keep to myself.
And yes that is snow in the background.

Yummy blueberry smoothie
Recipe adapted from Allrecipes
Serves 2 - 211 calories per serving
Ingredients
1 c. Of blueberries
8 oz. Of vanilla yogurt
3/4 c. Milk
2 T. Agave nectar
1/2 t. Vanilla extract

Blend all ingredients and serve immediately:).
Enjoy!!!

Daring Cooks Challenge: February

So I knew just what I was going to do when I heard what the challenge was for this month. We where supposed to make a fried patty. We could make whatever we wanted as long as it had a binder and it was fried in oil. Awesome right?? So I knew I was making a veggie Burger. My Tia (aunt) also took part in the challenge and she made her famous potato patties. I will also post her pics and recipe. Why don't we start with hers?

Tortas de papas:
Step 1: boil 2 to 3 potatoes for each person. Add plenty of salt. Boil until fork tender. If you boil the potatoes with the skin on she finds they come out more flavorful.

Step 2: Chill and peel your potatoes. Add 1 1/2 c. Of Cotija cheese. You can substitute with parmesan cheese if needed. Add 3 eggs and 1/2 a cup of green onions. Mix until well blended.
Spoon mixture into a frying pan with about one inch of oil and fry until golden brown, turning once.
After frying drain on a paper lined plate and let rest for 3 min. Serve with lettuce, sour cream and salsa.

Now my dish I did this month was one I found in Washington post. This recipe is for a black bean burger. It was delicious! I served it with burger toppings and BBQ sauce. (I know weird) And I made some sweet potato fries for the side.( I will post later) I loved the taste of this burger and the coloring. It was super easy to make. I cut the original recipe in half and it made 3 patties. So I have more in the freezer. :)
Please excuse the lighting. It barely snowed here in Oklahoma and it was awfully gloomy outside.

Black Bean Burgers
Adapted from Washington Post's "spicy black bean burgers"
2 c. Cooked and drained black beans
1/4 c. Bread crumbs
1 egg
2 scallions
2 T. Cilantro
1 Garlic clove, minced
1 t. Cumin
1 t. Oregano
A few sprinkles of red pepper flakes
1/2 t. Salt
Sprinkle of black pepper

Put most of your black beans into a food processor and pulse until chunky. Then add all the rest of your ingredients into the food processor and pulse until mixed. Form into patties and chill for fifteen minutes. When ready to cook remove from fridge and sprinkle with salt and pepper. Place a frying pan on high heat with just enough oil to coat the bottom. Then place the patty on the skillet and cook for 4 min. On first side. Then flip over and cook for 5 min. over medium heat.
Eat with whatever toppings you want:)
Makes 3 Burgers.

No HFCS Chocolate Syrup!! And A Success Story

First let's start with chocolate syrup. Haven't we all always used Hershey's chocolate syrup for chocolate milk? And then felt guilty after drinking two glasses and seeing the ingredient list?
Oops wait is that just me?
Most chocolate syrups contain HFCS or High Fructose Corn Syrup. This makes me hurt. And quite frankly I don't see why they put it in there if you can make the real stuff without it?
Try this syrup you won't be disappointed.

Chocolate syrup
Recipe from Washington Post.

Ingredients
1 c. Unsweetened cocoa powder
1 c. Granulated sugar
1 c. Cold water
1/4 t. Salt
2-3 t. Vanilla extract

In a medium saucepan whisk cocoa and sugar until the lumps are gone. Add the water and salt and mix well with whisk. Cook over medium heat and bring to a boil. Keep boiling until thick.
Remove from heat and allow to cool. Once cool add vanilla.

Now see wasn't that easy? Go reward yourself for making HFCS free syrup with two glasses of chocolate milk:).
