Tea Cooked Oatmeal

A few days ago I was reading adashofmeg and came across her Idea to cook oats in tea. Great idea right?? I mean it makes sense. The taste and warmth of your tea mixed with the taste of organic rolled oats. Plus I added blueberries:)

Tea Cooked Oats
Adapted from adashofmeg
one cup of tea ( I used a lemon grass and spear mint blend)
2 t. Of agave nectar
A small handful of blueberries
1 handful of oats
A splash of milk

Brew your cup of tea
then put one handful of oats into a small bowl and squeeze your agave into the bowl and sprinkle with blueberries.
Pour the tea into the bowl and cook for one minute.
Cool with milk and eat:)
Good right?;)

SUPERBOWL!!

So once again Superbowl has come and gone. Food had been devoured and one team has won. I think this was the only Superbowl I didn't watch. Yes I know ....what! But I was to busy watching kids at this game. So I caught up on Superbowl commercials on the today show the next day. Can I say Mr. Quiggly was one of my favorites. If I ever own a bulldog I am going to name him Mr. Quiggly. Too cute! I still can't get over it. So this is the pic of the good looking bunch of kids I watched during Superbowl:

This was taken after an intense game of dodge ball. Yeah.
Their names are Grant,( the one sticking out his tongue) Payton, (the little red head) McKenzie, ( the one in the purple) and Austin( the one in the angry birds t).

Also my team won so yay!!
And also I think everyone saw the Halftime show right?
I think what made it memorable was my lil sis Alli dancing to the show in front of the TV. Because I found Madonna's performance pretty ridiculous. I mean it was kinda entertaining in a silly kind of way. But that's just my opinion.

And I am sorry I totally forgot to take pics of the food. But I can assure you I ate my fare share. We brought homemade pizzas and I made a cinnamon dessert pizza.

Sorry!

Sorry I haven't posted anything new recently:( I have been so busy trying to finish my final exam in social civics plus working plus helping my mom prep the new heirloom garden plus getting ready for super bowl.(*out of breath*) I told myself I couldn't put these off anymore and put blogging on the back burner. Sorry! But I promise I will share my awesome fig Newton's, (if that makes you happy?) And my uncle's wedding pics, (sorry I've been putting that off) and my faves from across the web. Maybe I will try to get to it this weekend....

Fig Newton's

It's to good to be true. HOMEMADE FIG NEWTON'S!! This is what I thought when I saw the post on Brown Eyed Baker. I love fig Newton's but sadly don't get to eat it much because of how processed it is. So biting into this cookie(?) made me call to mind summer, road trips, and the smell of Oklahoma air in the summer time. ( Does that make me sound crazy??)
(You know the part where you miss Oklahoma summers? )

Fig Jam:
1/2 lb. Of Figs (I used Turkish)
2 c. Apple Juice
One pinch of salt

Put all ingredients in a pan and set over medium heat. Stir occasionally for fifteen to twenty minutes until soft and syrupy. Then allow to cool. Next process in a food processor. Empty into a jar to store.
You can use this not only for the fig Newton's but also as a regular jam.

Recipe from Brown Eyed Baker
Fig Newtons
All of your Fig Jam
1 1/4 c. All purpose flour
1/2 t. Baking powder
1/4 t. Salt
6 T. Unsalted butter
3/4 c. Brown sugar
1 egg at room temp
2 t. Vanilla extract
Preheat your oven to 350°. Then begin by lining a 8 inch square baking pan with parchment. Grease the parchment.
Then combine flour,powder,and salt.
Mix sugar, and butter until light and fluffy.
Then beat in egg and vanilla.
Stir in flour mix.
Place all but 3/4 c. Of dough into the pan and spread evenly.
Bake until just golden-20 min. Roll the remaining dough into a 8inch square between 2 sheets of greased parchment.
Place in freezer for 30 min. Then spread fig mix over crust and top with frozen dough. Bake 25-30 min. Cool 2 hrs.
Or eat them to "see if they are good" right away:)

My Veggie Sandwich

I eat this yummy sandwich pretty regularly.
Especially when my family is eating Turkey sandwiches. Today I was just looking for something fast and easy. I had already used oatmeal for breakfast.
Also Jennifer Hudson has inspired me to exercise and eat healthy:) I mean have you seen her??

And these donuts my mom made the other night might also be a contributing factor.
Yeah I think they might be a big chocolate glazed problem.
Veggie sandwich
1/4 tomato
1/4 onion
2 lettuce leaves
6 pickle slices
A little less than 1/4 c. Mozzarella cheese
2 slices wheat bread
2 T. Honey Mustard

First chop all your veggies.
Then assemble your Honey mustard.
pour some mustard:
Then some Honey or Agave:
Then stir:
Then you have Honey Mustard!
Next toast your bread with cheese in a toaster oven:
Then spread your Honey Mustard on the bread and assemble your sandwich:
Then eat!
Enjoy;)
